 Lemon Ricotta Pancakes 

Funny that when I was growing up I hated pancakes. Now I even like "fancy" pancakes at times. "Fancy" meaning anything from scratch instead of just the easy mix. Which I'm also totally fine with. This recipe I love but the girls hate so.... I got this recipe from kyleecooks.com.

Lemon Ricotta Pancakes

1 1/2 C. all purpose flour 

1 TBSP. baking powder

3 TBSP. sugar

1/2 tsp. salt 

1 C. milk 

1/2 C. ricotta cheese

2 eggs 

1 tsp. vanilla

2 TBSP. fresh lemon juice 

1 TBSP. fresh lemon zest 

2 TBSP. butter for cooking 

Mix all ingredients together. 

I like to eat these with butter syrup.  Which reminds me, I need to find that recipe to put up here.
