Here is the Cowboy Cookie that I found turns out the best when I make them. Maybe cookies are like clothes. You have to try out a recipe to see if it fits you. I got this recipe from the Stay at Home Chef. I changed up the goodness in it. I think cowboy cookies have all the good chips... milk, semi sweet, butterscotch. No reason to stop with just one kind of chip. Feel free to keep the goodness going. 


Cowboy Cookie 

1 C salted butter softened

3/4 C brown sugar 

1/2 C sugar 

3 large eggs

1 TBSP vanilla 

2 3/4 C flour 

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt 

1/2 C milk chocolate chips 

1/2 C semi sweet chocolate chips 

1/2 C butterscotch chips 

1/2 C chopped pecans

1/2 C coconut flakes 

Preheat oven to 375. Line two baking sheets with parchment paper or silicone baking mat. 

In the mixer add butter, brown sugar, sugar and mix. 

Add in the eggs and vanilla and combine. 

Add in flour, baking powder, baking soda, and salt. Mix. Add in oats. 

pour in chocolate and butterscotch chips, coconut, and pecans. 

Use a medium cookie scoop to shape cookies. Place on cookie sheets- make sure to give them space. 

Bake for 10-12 minutes, until tops are golden brown.
